  • 1 cup sharp cheddar cheese grated
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh chives chopped
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon sea salt for sprinkling after baking
  • 1 tablespoon honey for drizzling

Method
 

  1. Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper to prevent sticking.
  2. Place the thawed puff pastry on a lightly floured surface and roll it out gently to about 0.5 cm thick, smoothing out creases.
  3. Use a sharp knife or pizza cutter to cut the pastry into 2-inch squares, then transfer these to your prepared baking sheet.
  4. In a mixing bowl, combine the grated cheddar, chopped parsley, chopped chives, and cayenne pepper, mixing until well blended.
  5. Spoon a small dollop of the cheese and herb mixture onto the center of each pastry square, pressing down lightly to adhere.
  6. Bake in the preheated oven for 15-18 minutes, or until the bites are puffed, golden brown, and bubbling with cheese.
  7. Remove from the oven and let cool for a few minutes until just warm, so the cheese doesn't burn your mouth.
  8. Sprinkle the warm bites with sea salt to enhance flavor, then drizzle with honey for a touch of sweetness.
