  • 1 teaspoon lemon zest freshly grated
  • 2 cloves garlic minced

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Place each chicken breast between two sheets of plastic wrap or in a resealable bag, then gently pound with a meat mallet or rolling pin until they are about 1.5 cm thick and evenly flattened. This helps the chicken cook uniformly and stay juicy.
  3. In a small bowl, whisk together olive oil, lemon zest, minced garlic, smoked paprika, and chopped herbs if using. This vibrant marinade will infuse the chicken with flavor and keep it moist.
  4. Rub the marinade all over each chicken breast, making sure to coat every side thoroughly. The oil helps the spices stick and promotes a golden crust.
