Method
- Preheat the fryer or a large saucepan filled with vegetable oil to 350°F (175°C). Use a thermometer to ensure accurate temperature for crispy fries.

- Add the French fries to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Remove fries with a slotted spoon and drain on paper towels.
- Spread the freshly fried fries evenly on a baking sheet or serving plate, then sprinkle the shredded cheese generously over the hot fries to allow it to melt.
- While the cheese melts, pour the heated gravy into a saucepan over medium heat. Bring to a gentle simmer, stirring occasionally, until the gravy thickens slightly and is steaming.4 cups frozen or freshly cut French fries
- Once the cheese has melted completely and the fries appear crispy and coated, ladle the hot gravy evenly over the cheesy fries. The gravy should pour smoothly and create a saucy layer on top.4 cups frozen or freshly cut French fries
- Serve immediately while the fries are hot and the cheese is gooey, garnished with an additional sprinkle of salt if desired. Enjoy with a side of spicy gravy for extra flavor.
Notes
For extra crispy fries, double fry: fry once at lower temperature, then again at higher temperature. Use your favorite cheese blend for varied flavor. Adjust gravy spiciness according to taste.
