Disco Fries

Disco Fries consist of crispy golden French fries topped with melted cheese and spicy gravy, creating a savory, creamy, and slightly saucy dish. The piping-hot fries are layered with cheese until melted and then finished with a rich, flavorful gravy poured over the top, resulting in a indulgent, cheesy comfort food with contrasting textures.

Ingredients

  • 4 cups frozen or freshly cut French fries preferably straight-cut for even crispness
  • 1 cup shredded cheese (e.g., cheddar, mozzarella or a mix) preferably a good melting variety
  • 1 cup beef or vegetarian gravy spicy or traditional flavor, heated
  • 1 tbsp vegetable oil or frying oil for frying fries
  • to taste salt

Equipment

  • Fryer or Large Saucepan
  • Baking Sheet or Serving Plate
  • Saucepan for gravy
  • Ladle or Spoon
  • Cheese grater
  • Cooking spoon

Method

  1. Preheat the fryer or a large saucepan filled with vegetable oil to 350°F (175°C). Use a thermometer to ensure accurate temperature for crispy fries.
  2. Add the French fries to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Remove fries with a slotted spoon and drain on paper towels.
  3. Spread the freshly fried fries evenly on a baking sheet or serving plate, then sprinkle the shredded cheese generously over the hot fries to allow it to melt.
  4. While the cheese melts, pour the heated gravy into a saucepan over medium heat. Bring to a gentle simmer, stirring occasionally, until the gravy thickens slightly and is steaming.

  5. Once the cheese has melted completely and the fries appear crispy and coated, ladle the hot gravy evenly over the cheesy fries. The gravy should pour smoothly and create a saucy layer on top.

  6. Serve immediately while the fries are hot and the cheese is gooey, garnished with an additional sprinkle of salt if desired. Enjoy with a side of spicy gravy for extra flavor.

Notes

For extra crispy fries, double fry: fry once at lower temperature, then again at higher temperature. Use your favorite cheese blend for varied flavor. Adjust gravy spiciness according to taste.
