  • 1 cup dried brown lentils rinsed
  • 1 cup vegetable broth for simmering
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons tomato paste concentrated flavor
  • 1 teaspoon smoked paprika adds smoky flavor
  • 2 cups pasta or grains cooked, for serving

Method
 

  1. Heat the olive oil in a large skillet over medium heat until shimmering and fragrant.
  2. Add the finely chopped onion and cook, stirring occasionally, until it becomes translucent and starts to turn golden, about 5 minutes. The kitchen will fill with a sweet aroma.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant, taking care not to burn it.
  4. Add the rinsed lentils to the pan, stirring to coat them with the oil and aromatics. Toast for about 2 minutes until fragrant and slightly nutty.
  5. Pour in the vegetable broth and soy sauce, stirring to combine. Bring the mixture to a gentle simmer, then reduce the heat to low and partially cover.
  6. Stir in the tomato paste and smoked paprika, blending them into the sauce. Let everything simmer gently for 25-30 minutes, stirring occasionally, until the lentils are tender and the sauce thickens.
  7. Uncover the pan and continue simmering for another 5-10 minutes to allow the sauce to deepen in flavor and thicken further. If it gets too thick, add a splash of broth to loosen it.
  8. Taste the sauce and adjust seasoning with salt, pepper, or more soy sauce if needed. The sauce should be rich, smoky, and coated with a glossy finish.
  9. Remove the skillet from heat and let the sauce rest for 5 minutes, allowing flavors to meld and the sauce to thicken slightly.
  10. While the sauce rests, prepare your cooked pasta or grains according to package instructions.
