Method
 

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter and sugar using an electric mixer or whisk until the mixture is light, fluffy, and pale in color, about 2-3 minutes. Watch for a smooth, airy texture.
  3. Add the vanilla extract and lime zest to the creamed mixture, then beat until well incorporated. The lime zest will become visibly distributed and fragrant.
  4. Gradually add the flour and salt to the wet mixture, mixing on low speed or stirring until the dough comes together. The dough should be soft but hold together when pressed.
  5. Scoop out tablespoon-sized portions of dough and roll into balls with your hands. Place them evenly spaced on the prepared baking sheet. Slightly flatten each ball with the bottom of a glass if desired.
  6. Bake in the preheated oven for 10 minutes, or until the edges are lightly golden and the centers are set. The cookies will crack slightly and smell fragrant.

Notes

Store cookies in an airtight container for up to one week. For extra citrus flavor, sprinkle a tiny pinch of additional lime zest on top while warm.
