Ingredients
  

  • 4 flour tortillas large-sized
  • 1 cup cup cooked shredded chicken or beef or any cooked meat option
  • 1/2 cup cup black beans rinsed and drained
  • 1 cup cup shredded cheese cheddar or Monterey Jack
  • 1 tablespoon tbsp vegetable oil for toasting tortillas

Method
 

  1. Measure out your ingredients and have everything ready to assemble, including shredded meat, beans, cheese, and tortillas.
  2. Heat a skillet over medium heat and add a small splash of vegetable oil. Once shimmering, place a tortilla in the pan.
  3. Cook the tortilla for about 30 seconds until it starts to bubble and turn lightly golden around the edges, then flip using tongs or a spatula.
  4. Toast the second side for another 30 seconds, pressing gently with the spatula for even browning, and then remove the tortilla from the skillet.
  5. Add the cooked shredded meat and beans onto the warmed tortilla, spreading slightly but leaving room to fold.
  6. Sprinkle the shredded cheese evenly over the fillings to let it melt slightly from the heat of the other ingredients.
  7. Repeat the heating and toasting process with the remaining tortillas, stacking them nearby.
  8. Once all tortillas are filled and slightly warmed again if needed, fold each in half, pressing gently to secure the fillings inside.
  9. If desired, briefly toast each folded taco in the skillet for another 1-2 minutes until the outside is crispy and cheese is melted inside, flipping carefully.
  10. Remove the tacos from the skillet and let them rest for a minute, then serve warm and enjoy the crispy, melty goodness.
