Ingredients
  

  • 1 pound fresh strawberries hulled and halved
  • 0.75 cup granulated sugar adjust to taste
  • 1 teaspoon lemon zest freshly grated
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon ground cinnamon optional, for warmth
  • 1 teaspoon vanilla extract optional

Method
 

  1. Combine the strawberries and sugar in a saucepan and let sit for 5 minutes to draw out some juice.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent sticking.
  3. As the berries start to soften and release their juices, add the lemon zest, lemon juice, cinnamon, and vanilla extract for aroma and depth of flavor.
  4. Continue simmering for about 10-15 minutes, mashing some of the berries with the back of a spoon to achieve a thicker, sauce-like consistency while leaving some whole berries intact.
  5. Check the thickness — it should be glossy and jammy, with a vibrant red hue. Remove from heat and let cool slightly before serving.
  6. Spoon the warm compote into jars or bowls, and enjoy it draped over yogurt, pancakes, or ice cream for a sweet, fruity finish.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be canned for longer preserving.
