Ingredients
  

  • 1 sheet puff pastry frozen puff pastry sheet thawed according to package instructions
  • 4 oz cream cheese cream cheese softened for easy mixing
  • 1/4 cup granulated sugar granulated sugar
  • 1 teaspoon vanilla extract vanilla extract
  • 1 cup fresh strawberries hulled and sliced
  • 1 egg egg beaten, for egg wash
  • 1 tablespoon water water to mix with egg for wash

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry sheet onto a lightly floured surface and roll it out gently to smooth the folds, then cut it into six equal squares.
  3. Mix the softened cream cheese, sugar, and vanilla extract in a bowl until smooth and creamy.
  4. Spoon or pipe a small dollop of the cream cheese filling onto the center of each pastry square.
  5. Arrange sliced strawberries on top of the cream cheese filling, slightly pressing them in so they stay in place during baking.
  6. Mix the beaten egg with water to create an egg wash, then brush it lightly over the exposed edges of each pastry to encourage browning.
  7. Bake the pastries in the preheated oven for about 20–25 minutes, or until the edges are golden brown and the pastry is puffed and crisp.
  8. Remove from the oven and let cool slightly on the baking sheet; the filling should be soft and the crust flaky with a beautiful golden hue.
