Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Using a sharp knife, make a small slit along the side of each date to create an opening for stuffing.
  3. Spoon a small amount of cheese into each date, pressing gently to fill the cavity and making it feel slightly rounded on top.
  4. Cut each bacon slice in half crosswise to create smaller strips that will wrap around the dates nicely.
  5. Wrap each stuffed date with a bacon strip, ensuring the cheese is covered and the bacon overlaps slightly.
  6. Secure each bacon-wrapped date with a toothpick to hold everything in place.
  7. Arrange the bacon-wrapped dates on the prepared baking sheet, spacing them evenly.
  8. Bake in the oven for 15-20 minutes, or until the bacon is crispy and golden brown, and the cheese is slightly melted.
  9. Remove the baking sheet from the oven and let the dates cool slightly; the cheese should be gooey and the bacon crisp.
  10. Carefully remove the toothpicks and transfer the bacon-wrapped dates to a serving platter.
